TZATZIKI (tuh-zee-kee)

In our kitchen, no store-bought can match the freshness of homemade tzatziki. Using Garlic infused oil instead of fresh garlic means the garlicky taste won't overwhelm your sauce. Tzatziki is a cool, refreshing fusion with any one of your Mediterranean and Middle Eastern (often called Raita) dishes.

INGREDIENTS:

  • 2 cups plain Greek yogurt
  • 1/3 cup finely grated cucumber (peeled, seeded, and well-drained)
  • 1 tbsp Wild Fernleaf Dill EVOO
  • 1 tbsp Garlic EVOO
  • 1½ tbsp Sicilian Lemon White Balsamic
  • 1/2 tsp Kosher salt

DIRECTIONS:
Grate the cucumber on the fine side of a box grater, then squeeze out as much liquid as possible using a clean cloth or paper towel. In a medium bowl, whisk yogurt with grated cucumber, Dill EVOO, Garlic EVOO, Lemon Balsamic, and salt until smooth and well blended. Chill before serving for best flavour. Spoon on köftes, pita, or anything grilled.
