
FRIED BREAD IN EVOO
Better than toast! Frizzling edges, fresh olive oil deep into pockets with a soft, chewy inside and crispy edges on the outside. For endless options, use one of our infused oils like Garlic or Herbes de Provence. You'll never go back to plain toast with your eggs but don't stop there. Slather on some burrata cheese, or slices of fresh parm with ham, or sweet tomatoes for an indulgent midnight snack.
In a cast iron pan, heat fresh olive oil to medium-high to high. When it shimmers place sliced bread, sourdough is a fabulous option, and fry until golden on one side then flip and fry on the other.
For a real treat, a snack or an appetizer dollop whipped ricotta with a drizzle of your favourite flavoured EVOO or balsamic. Whip whole milk ricotta cheese until light and smooth. A food processor gives the best texture, but a bowl and whisk work, too. Season lightly with salt. The ricotta should taste clean and gently savoury, not assertive.
Eat immediately, while the bread is hot and the ricotta cool.
