Our cilantro cashew pesto is a tantalizing twist on the classic where the vibrant bright, citrusy notes of cilantro add a refreshing and aromatic dimension, while the buttery cashews contribute a delightful nuttiness that lingers on the palate. 


2 cups fresh cilantro leaves, packed
1/2 cup cashews
2 cloves garlic
1/4 cup grated fresh Parmesan cheese
1/4 cup extra virgin olive oil
1 tbsp Key Lime white balsamic or fresh lime juice
Salt and pepper to taste


In a food processor add cilantro leaves, cashews, garlic, and cheese. Pulse a few times until the ingredients are roughly chopped and combined. While the processor is running, slowly drizzle in EVOO. Continue blending until the mixture becomes smooth and well combined. Add lime juice, salt, and pepper to taste. Pulse a couple of times to blend all flavours. Taste and adjust for seasoning. For a thinner pesto, carefully add a few drops of oil. Transfer the pesto to a jar or airtight container. You can store in the fridge for one week or freeze for extended storage. 

When ready to use, toss with pasta, spread on sandwiches or wraps, combine with more olive oil and lime balsamic to use a marinade for meats and fish, or drizzle over vegetables.
