YORKSHIRE PUDDINGS & POPOVERS

We've prepared this recipe numerous times. Fabulous. While these Yorkshire's are guaranteed to elevate your holiday beef roast feast, you can make these golden, puffed marvels any day of the week. Crafted from a humble batter, the individual puddings are transformed by our high smoke point EVOO for crispy edges and a soft, airy inside. 

SERVES: 12 puddings

INGREDIENTS:
12 tbsp EVOO (1 tbsp per muffin compartment )
3 eggs
1 cup flour
1-1/4 cups 2% or whole milk
1/8 tsp Kosher salt

DIRECTIONS:
In a large bowl add eggs and whisk well. Then add flour, milk and salt and whisk until completely smooth. Let rest for 30 minutes. If you have the time, place the batter in a covered container and place it in the fridge overnight. The longer you let the batter rest, the puffier the puddings. 

Preheat oven to 450°. In a 12 standard size muffin tin, add 1 tbsp EVOO in each compartment. Place in oven for 5-10 minutes until the oil is very hot. Remove from the oven and using a measuring cup, carefully pour the batter into each compartment.  The wells should be filled between 1/2 and 3/4. Place in oven and cook for 12 to 15 minutes. Serve immediately.
