We've prepared this recipe numerous times. Absolutely fabulous. Crisp on the outside and soft on the inside. The best part? You can make these any day of the week. YUM!
SERVES: 12 puddings
12 tbsp extra virgin olive oil
1 cup flour
1-1/4 cups 2% or whole milk
1/8 tsp Kosher salt
Preheat oven to 400 degrees. In 12 standard size cupcake tray add 1 tbsp olive oil in each compartment. Place in oven for 15 minutes until oil gets really hot. In a large bowl add eggs and whisk well. Then add flour, milk and salt and whisk until completely smooth. Let rest for 15 to 30 min. Remove the tray from the oven and using a measuring cup, carefully pour the batter into each compartment until almost full. Place in oven and cook for 12 to 15 minutes. Do not open door during cooking. Serve immediately.
