3-MINUTE DRESSING

Uncomplicated, quick, easy to make with basic ingredients from the farmer's market and your pantry. Perfect for any combination of lettuce and greens. Even without any other additions to your salad you can make a gourmet inspired salad with "two" ingredients: a fresh extra virgin olive oil and an aged dark or white balsamic. Use a measuring cup, or a squeeze bottle (it's better). Our basic recipe is 2 parts oil and 1 part balsamic. Doesn't matter how much you whisk together, the basic combination works beautifully.

Optional Ingredients for a salad: variety of veggies, fruits or pre-cooked meats, fresh Parmesan, grilled asparagus, spring sugar snap peas, grilled/roasted chicken, finely sliced fennel, french orange quarters, fresh cubed mango, spring radishes finely sliced, fresh baby spinach and so on.

A SELF-EMULSIFYING DRESSING?
No magic here—just food science! Our fresh EVOOs contain natural phospholipids and glycolipids that act as emulsifiers, while our thick barrel-aged balsamics provide stabilizing viscosity. Together, they create silky, stable dressings with a simple whisk—no additives needed. Superior ingredients do the work that mustard or egg would in ordinary recipes for pure flavour and beautiful presentation from pan to plate.

EVERYDAY DRESSING: 

  • 1/2 cup EVOO, plain, fused or infused (less or more guided by 2 parts EVOO to 1 part balsamic)
  • 3 tbsp balsamic
  • Kosher salt to taste
  • Freshly ground pepper to taste

DIRECTIONS: In a small bowl or squeeze bottle add oil(s) first and then balsamic. Whisk or shake until creamy. Drizzle on salad. You can use this as a stir fry dressing as well. Add to pan near the end of cooking and gently toss to coat. You can store dressing in your pantry in a squeeze bottle or covered covered. No need to refrigerate.
