COCONUT-MUSTARD SAUCE*
This is one of our easy-peasy sauces that you can make in less than 15 minutes. It's fabulous with any seafood or a wonderful sauce for a veggie stir fry. Serve with rice and dinner's ready!
1/2 tsp
Cayenne olive oil1 can coconut milk
2 tsp honey
2 tsp yellow sweet mustard (French's style)
1/2 tsp ground turmeric
2 cups of a selection of green beans, asparagus, sugar snap peas and carrots, cut into 1-inch pieces
4 cherry tomatoes, cut in quarters, lengthwise
2 tsp fresh lime juice
1/2 cup fresh cilantro leaves (no stems)
Cilantro olive oil for drizzle
DIRECTIONS:
In a large skillet on medium heat, add olive oils, then garlic and saute 4 minutes, being careful not to brown. In a separate bowl combine coconut milk, honey, mustard, and turmeric. Add to skillet and bring to bring to a simmer. Add salt. Cook until reduced by one-third, about 15 minutes. Add vegetables, excluding tomatoes, and cook until tender. Remove from heat and add tomatoes and lime juice. Garnish with fresh cilantro and a drizzle of Cilantro olive oil. Serve with rice.
