The order of ingredients is important. Tahini has the habit of clumping together, not blending well with the yogurt. Mixing the hot water with Tahini first loosens and softens it, ready to incorporate the yogurt for the silkiest sauce.
1/2 cup tahini
1/4 cup boiling water
2 tbsp Lime olive oil
2 tbsp Key Lime white balsamic or fresh lime juice
1 tsp ground cumin
1/2 tsp Kosher salt
1 clove garlic, minced or 1 tsp Garlic olive oil
1 cup full fat, Greek style yogurt
In a small bowl, whisk tahini with water to form a loose paste. Then whisk in olive oil, lime balsamic, cumin and salt. Add garlic and whisk again. Add yogurts and stir well making an extra smooth sauce. You can store the sauce in an airtight container until ready to use.
