Nothing beats perfectly grilled or roasted chicken thighs. These are served with tzatziki for a brilliant burst of sunny flavour. 


1/2 cup Sicilian Lemon white balsamic
4 tbsp Garlic olive oil
3 tbsp Extra Virgin Olive Oil
1/4 cup Lemon olive oil
1/2 tsp Kosher salt (season to taste)
1/4 tsp fresh ground black pepper (season to taste)
6 chicken thighs, bone in, skin on

Option: Add 1 teaspoon Köfte Baharat spice to marinade

    Heat BBQ to medium. Add all ingredients excluding chicken to medium bowl and whisk until creamy. Pat chicken dry and place in a large ziplock bag. Gently pour in 3/4 of the marinade and then massage into all crevices of chicken. Let rest for 30 minutes, turning occasionally. Place chicken skin side down. After 15 minutes, turn over chicken skin side down. Grill another 15 to 30 minutes, checking for burning. Reduce heat to medium-low, close cover and cook and additional 20 minutes. until an instant read thermometer registers 150 degrees. Serve with Tzatziki sauce and drizzle with remaining marinade.
    Cooking option: Roast in oven at 400° on parchment lined baking sheet. Follow grilling directions.
