For an extra layer of creaminess add a few tablespoons of a fresh fruity extra virgin olive oil to your whipped cream. Delectable with fruit, a dollop with your cake, or almost anything chocolaty.
2 cups whipping cream
1 to 2 tbsp powdered sugar
3 tbsp fresh, mild extra virgin olive oil*
*Tip: For a zesty lime flavour, use Persian Lime olive oil
Place cream and sugar in a large, pre-chilled bowl. When the cream forms stiff peaks switch the mixer to low and then slowly drizzle in olive oil, mixing until oil is combined, being careful not to overmix. Store, covered, in fridge until ready to use.
