Siciliy's Salmoriglio (sal-more-EEL-ee-yo) is a traditional Sicilian sauce made with simple ingredients: olive oil, lemon juice, garlic, and herbs. We use it as  marinade in this recipe but you can use it as a sauce on seafood, fish and veggies, too.

INGREDIENTS:
4 to 6 chicken thighs (or whole chicken pieces), skin on and bone in
1/2 cup Lemon EVOO 
Juice of 2 lemons
4 cloves garlic, minced
2 tbsp fresh oregano leaves, finely chopped (or 2 tsps dried oregano)
2 tbsp fresh parsley, finely chopped (or 2 tsps dried parsley)
1 tsp Kosher salt 
1/2 tsp freshly ground pepper

DIRECTIONS:
In a medium bowl, whisk olive oil, lemon juice, garlic, oregano, parsley, salt and pepper until creamy. Place the chicken pieces in resealable plastic bag. Reserve a few tablespoons of marinade for garnish. Pour in the rest of marinade into bag, gently pressing into chicken. Allow chicken to marinate for 1/2 hour or more. Preheat grill to medium heat. Remove the chicken from the marinade, draining off excess marinade to drip off. If using both light and dark chicken pieces cooking time may vary. Brush leftover marinade on chicken while grilling. Cook chicken pieces until the internal temperature reaches 165°.
