Northern and southern Italy come together in this super easy chicken dish. Gremolata is a northern Italian condiment made with fresh lemon zest, minced garlic, Italian flat leaf parsley and a hint of mint. These flavours are infused into our extra virgin olive oil. Neapolitan Herb is a dark balsamic made from traditional herbs long used in Southern Italy's Neapolitan cuisine including, rosemary, marjoram, thyme, garlic, and sage. 


8-12 chicken drumsticks
3/4 cup Milanese Gremolata EVOO
1/4 cup Neapolitan dark balsamic
2 tbsp Garlic EVOO
1 tsp Burlap & Barrel Dried Lemongrass Spice
1 tsp fresh ground black pepper   
Optional garnish: Italian parsley leaves and lemon, thinly sliced horizontally


In a mixing bowl, whisk all ingredients until creamy. Reserve 1/4 cup marinade for serving. Place chicken in resealable plastic bag. Pour in rest of the marinade and gently press into chicken pieces. Place in fridge for at least two hours (or overnight). Preheat oven to 400 degrees. Remove chicken from fridge. Transfer to a parchment lined sheet pan with sides, shaking off excess marinade. Roast 40 minutes until done. Garnish with lemon slices and parsley. Serve with remaining marinade for dipping and drizzling.
