2 medium cucumbers, peeled and seeded
1/2 large onion thinly sliced
4 tbsp Dill infused olive oil
2 tbsp Sicilian Lemon white balsamic
1/2 tsp salt
1/4 tsp fresh ground pepper
Cut cucumbers in half lengthwise, seed then slice in 1/2" slices. Toss onions and cucumbers together in a bowl. Add olive oil, balsamic vinegar, salt, and pepper. Stir to combine, taste and adjust seasoning if necessary. Serve or place in the refrigerator until ready to serve. Option: When serving add fresh dill as a garnish.
