Refreshing and bursting with vibrant flavours, our Lemon Dill Cucumber salad features our Sicilian Lemon white balsamic and Wild Dill EVOO. It's a perfect balance of tang and herbaceous essence. It's a great addition to any main, especially anything spicy, or a as standalone dish with crusty bread. 

2 medium cucumbers
1/2 large onion thinly sliced
4 tbsp Dill infused olive oil
2 tbsp Sicilian Lemon white balsamic
1/2 tsp salt
1/4 tsp fresh ground pepper

Cut cucumbers in half lengthwise, peel, seed, then cut in 1/2" slices.  Alternatively, leave cucumbers unpeeled and cut in thin slices.  Toss onions and cucumbers together in a bowl. Add olive oil, balsamic vinegar, salt, and pepper. Stir to combine, taste and adjust seasoning if necessary. Serve or place in the refrigerator until ready to serve.  Option: When serving add fresh dill as a garnish.
