ARTISAN CRACKERS
These delicate, golden-hued crackers are an ideal base for showcasing an array of seasonal cheeses, cured meats, and late summer fruits, the perfect canvas for a charcuterie spread. Homemade, these crackers are crunchy with a subtle, nutty flavour from fresh extra virgin olive oil. For an aromatic or spicy boost use an infusion EVOO like Herbes de Provence, Tuscan Herb, Garlic or Cayenne. Their slightly irregular shapes and scattered flecks of sea salt or sesame seeds, speak to their artisan origins.
INGREDIENTS:
2 cups all purpose flour
1 tsp Kosher salt
1 tsp sugar (optional)
1/3 cup fresh EVOO or infused oil of your choice
2/3 cup warm water
Optional toppings: sea salt, herbs, sesame seeds, or poppy seeds
DIRECTIONS:
Preheat the oven to 425°. In a large bowl, whisk flour, salt, and sugar (if using). Add olive oil and water to the dry ingredients. Mix with wooden spoon or by hand until a dough forms. Knead the dough for about 5 minutes until smooth. Divide the dough into two portions. Wrap in plastic wrap and rest for 15 minutes. On counter, place a lightly floured sheet of parchment paper. Place dough on sheet and roll out as thinly as possible without being transparent. Transfer the parchment with rolled dough onto baking sheets. Using a knife or pizza cutter, cut the dough into desired cracker shapes. Brush with EVOO. Prick the crackers with a toothpick. Sprinkle toppings of your choice.
Bake for 12-15 minutes, or until the crackers are golden brown and crisp. Allow to cool completely. Store in an airtight container.
