AN EASY EVERYDAY BRUSCHETTA

Three Ways to Serve

A simple, flexible appetizer with 3 ways to serve: toss it in a bowl and serve with a spoon alongside other appetizers; spread on a long Italian loaf, smother with cheese, and bake; or enjoy with crackers or toasted pita.  The Tuscan Herb Infusion means you don't need to add a lot of extra herbs. 

SERVES:  4

INGREDIENTS:
4 garlic cloves roughly chopped
1 minced shallot
1/2 Tsp sea salt (or kosher)
6 plum tomatoes
2 green onions finely chopped
3 Tbsp Tuscan Herb Infused Olive Oil
1 Tbsp Traditional Dark Balsamic or Sicilian Lemon White Balsamic
2 Tbsp chopped flat-leaf parsley
Optional: 1 baguette, sliced then toasted 
Salt and Pepper to taste

DIRECTIONS:
Crush and roughly chop the garlic, mince the shallot and place in medium-sized bowl.  Sprinkle with salt and toss to combine.  Chop tomatoes, rinse to remove seeds and pat dry with paper towel. Add tomatoes and green onions to bowl.  Add olive oil and balsamic, stir and coat evenly.  Sprinkle with chopped parsley, season to taste with salt and pepper then gently toss.  Allow to sit for 1 hour then dollop on toasted baguette slices or your favourite version.
