ROASTED VEGGIES WITH TURMERIC AND CUMIN



An incredible way to roast vegetables! Turmeric is the right spice for winter roasting. 

INGREDIENTS:
 
4 carrots, peeled and cut in 2-inch pieces
2 sweet potatoes, cleaned, peeled and cut in 2-inch pieces
3 red potatoes, cleaned and cut in 2-inch pieces
1 red onion, peeled, cut in 2-inch pieces
6 garlic gloves, peeled
tbsp fresh extra virgin olive oil (or Garlic olive oil)
 1 tsp Kosher salt
1/2 tsp fresh ground pepper
1 tsp dried thyme
1/2 tsp ground turmeric
1/2 tsp ground cumin
Garnish: Sicilian Lemon white balsamic, Greek yogurt

DIRECTIONS:

    Preheat the oven to 400 degrees. In large bowl add all cut vegetables. Add olive oil, salt, pepper, dried herbs and spices. Toss gently until completely covered. 
    Heat a heavy baking sheet in the oven for 3 to 4 minutes. Remove from oven and place vegetables in one layer. Roast for 25 minutes, turning vegetables occasionally. Remove from oven when tender. Serve with Greek yogurt and a drizzle of Sicilian Lemon white balsamic.
