BLISTERED CHERRY TOMATOES

This dish features vibrant cherry tomatoes spread out on a baking sheet and drizzled with high-quality extra virgin olive oil. The tomatoes are then roasted in the oven until they become soft, slightly caramelized, and burst with concentrated flavor. The heat intensifies the tomatoes' natural sweetness while the olive oil adds richness and depth.

INGREDIENTS:
12-15 cherry or cocktail tomatoes, stems on or separated, washed and dried
1/4 cup EVOO 
Salt and freshly ground black pepper to taste

Optional: Substitute Thyme, Oregano or Basil EVOO 

DIRECTIONS:
Preheat your oven to 400°F. Place the tomatoes in ziploc bag or medium bowl. Pour in EVOO, sprinkle salt and pepper and gently toss until completely coated. Place on on large baking sheet. Roast/bake for 15 to 20 minutes until tomatoes are soft and slightly blistered. Remove from the oven and let cool for a few minutes before serving. Enjoy as a side dish, on top of pasta, or as a bruschetta topping.
