Pineapple pizza, also known as "Hawaiian" was invented in 1962 by Greek-born restaurant owner Sam Panopoulos in Chatham, Ontario. He was inspired by popular sweet n' sour Chinese dishes of the time. The pizza dish had a bumpy ride in the following decades, polarizing opinions among pizza aficionados. We're siding with those who love it. And with Australia where it's their favourite pie. If you've never tried it, go for it. Our recipe is inspired by the original but feel free to use fresh pineapple, bacon, other cheeses, olives and fresh greens as long as you stick with the basics of pork and pineapple.

INGREDIENTS:
Pizza dough (store bought or homemade)
Pizza sauce
2 cups shredded mozzarella cheese
6 ounces (150g) cooked ham or bacon cut in bite size pieces 
Canned pineapple chunks, drained

Salt and pepper to taste

DIRECTIONS:
Preheat the oven to 450°. If using store bought dough, bring it to room temperature before using to minimize shrinking while stretching/rolling. Roll out the pizza dough on a parchment lined baking sheet or pizza stone. Spread a thin layer of sauce over the dough. Sprinkle cheese over the sauce. Evenly distribute the diced ham or bacon (or both) over the cheese. Add pineapple chunks, spreading them across the pizza. Bake for about 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Remove from the oven, let it cool for a few minutes, then slice and serve. Drizzle with Traditional balsamic and fresh EVOOs.
