Heat oven to 425°F. Set a rack on parchment lined baking sheet. Pat wings very dry. Place the wings in a large bowl. Sprinkle with salt and toss thoroughly so it distributes evenly. Then sprinkle over the baking powder and toss once more, using your hands to separate and coat the wings evenly without clumping.
In a small bowl or measuring cup, whisk EVOO and balsamic until smooth and glossy. Brush wings lightly with glaze. Return to oven 5 minutes. Flip, brush again, and roast 3 to 5 minutes more until sticky avoiding too much char.
Option: Double the glaze ingredients for extra dipping sauce.
