LEMON DILL TORTELLINI

Our Lemon Dill Cheese Tortellini delivers a perfect balance of brightness and comfort for a spring evening. The delicate EVOO & cream sauce carries a vibrant zing of lemon, garlic and dill. It's a light yet satisfying, with each forkful offering a harmonious blend of herbaceous freshness and indulgent richness that lingers pleasantly after the final bite.

INSTRUCTIONS:

  • 1 package store-bought cheese tortellini
  • 2 tbsp Butter EVOO
  • 1 tbsp Garlic EVOO
  • 1 tbsp Lemon EVOO
  • 1 tbsp Sicilian Lemon white balsamic
  • 2 tbsp Dill EVOO 
  • 1/4 cup whipping cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt and freshly ground black pepper to taste
  • 1 cup frozen peas, thawed (optional)

DIRECTIONS:

Bring a large pot of salted water to a boil. Cook the tortellini according to package directions until al dente. Reserve 1/2 cup of pasta water before draining. While the pasta cooks, place EVOOs in a large skillet over medium heat. Add lemon balsamic, whisking to combine. Pour in the cream and bring to a gentle simmer. Add the drained tortellini and toss gently to coat with the sauce. If the sauce is too thick, add a splash of the reserved pasta water. Stir in the Parmesan cheese until melted. If using peas, add them now and stir until warmed through. Season with salt and pepper to taste. Serve immediately, garnished with additional grated Parmesan and fresh dill if desired.
