This healthy chocolate hummus is super creamy, chocolaty, nutty and simply surprising. Less sweet than a scoop of icing on a cake, this hummus treat combines cocoa, chickpeas, maple syrup and the sophistication of a fruity extra virgin olive oil finish. It's a great snack add-on with fruit!
INGREDIENTS:
1 540ml can less 1/2 cup (440ml) chickpeas, well rinsed and drained
1/4 cup cocoa powder
1/4 cup maple syrup
2 tbsp fresh extra virgin olive oil
1 tsp vanilla extract
1/4 tsp salt
2-4 tbsp water, as necessary
DIRECTIONS:
In a food processor, combine the drained chickpeas, cocoa powder, maple syrup or honey, extra virgin olive oil, vanilla extract, and salt. Process the mixture until smooth, scraping down the sides as needed. Optional: Place ingredients in a deep mixing bowl. Use immersion blender to puree the mixture until smooth, ensuring everything is incorporated. If the mixture is too thick, add water, one tablespoon at a time, until you reach your desired consistency. Taste and adjust the sweetness or saltiness according to your preference.
When serving, drizzle a little extra virgin olive oil on top and sprinkle with toppings like sliced strawberries, banana, shredded coconut, or chopped nuts. Serve with sliced fruits, pretzels, or crackers for dipping.
