Peaches are the true jewels of late summer. A simple dice transforms them into a saucy salsa that's joined by a spirited trio of red onions, smokey Chipotle EVOO and a drizzle of sweet Key Lime balsamic. Not satisfied to be an accompaniment to tortilla chips alone, try a generous spoonful on a juicy grilled chicken breast. The colours alone are simply ravishing. Tip: In the off season you can use nectarines and add a teaspoon or two of Peach white balsamic to up the natural beauty of a summer peach.
3 ripe peaches, peeled, pitted, and diced in 1/4-inch pieces
1/4 cup red onion, finely chopped
1/2 cup fresh sweet red pepper, diced in 1/4-inch pieces
1/2 tbsp Chipotle EVOO
2 tbsp Key Lime white balsamic or the juice of 2 fresh limes
Salt to taste
Combine all ingredients in a medium bowl. Gentle toss until peaches are coated. Cover with plastic wrap and place in fridge for at least 30 minutes. Serve chilled and serve as a condiment with grilled chicken, on toasted bread for a peach bruschetta or with your favourite tortilla chips.
