Another mac n' cheese Italian-inspired option that's ready in 20 minutes. A generous amount of Garlic olive oil, a bit of cream, some Parm, pasta cooking water and a dash of golden turmeric to brighten and deepen the flavour. 


1 package spaghetti or other long pasta 
2 to 3 tbsp Garlic olive oil
1/2 sweet onion, thinly sliced
2 tsp Kosher salt (one for pasta water, one for sauce)
1/2 tsp fresh ground black pepper
1/2 tsp ground turmeric
1 cup heavy cream
2 cups lightly packed fresh Parmesan, grated
Garnish: Chopped fresh parsley, Cayenne olive oil (for heat)


Prepare pasta according to package directions. Reserving 1 cup of pasta water, remove from heat and drain when barely al dente. It will cook in the sauce. In a large skillet, place olive oil and heat to shimmer. Then add onion, salt and pepper and cook for 2 minutes. Add turmeric and stir for half a minute, then cream, whisking while simmering. Gradually, add Parmesan a little at a time, stirring after each addition. Then add spaghetti and half the pasta water cooking and coating while stirring. As necessary, add more pasta water if the sauce is too thick. Serve with parsley and a drizzle of Cayenne olive oil.
