CHICKEN LEEK PIZZA

This mouthwatering pizza combines tender rotisserie chicken with the subtle sweetness of sautéed leeks, complemented by creamy, melted cheese and punctuated with our exclusive meaty whole piri-piri olives. Satisfying enough for adults while being fun to assemble for kids, this pizza's bright flavours and simple prep offers a delicious homemade alternative to takeout that the whole family can enjoy creating together.

INGREDIENTS (For two pizzas):

  • Store bought fresh pizza dough 
  • 1-2 cups roasted or store bought rotisserie chicken, shredded
  • 1 large leek, cleaned and thinly sliced
  • 1-1/2 cups cheese (Swiss or a mix of half Mozzarella and half Swiss)
  • 1/2 cup Garlic & Chili Olives, roughly chopped
  • 2-3 tbsp EVOO
  • 2-3 cloves garlic, minced or 1 tbsp Garlic EVOO
  • Salt and pepper to taste

DIRECTIONS: 

Preheat your oven to 500°. If using a pizza stone, place it in the oven while preheating. In a skillet over medium heat, sauté the sliced leeks in a tablespoon of olive oil until soft, about 5-7 minutes. Add minced garlic or Garlic EVOO and cook for another 30 seconds. Season with salt and pepper. Split store bought dough in half. Roll out each pizza on a floured surface to your desired thickness. Brush the dough with EVOO and sprinkle with a little salt. Spread the sautéed leeks and garlic over the dough. Distribute the shredded roasted chicken evenly over the leeks. Sprinkle the cheese over the chicken. Add the olives on top. Bake for 10-15 minutes, or until the crust is golden and the cheese is bubbly and slightly browned. Remove from the oven, let rest for 5 minutes, slice, and serve immediately.
