For salad dressings, whisk 2 parts EVOO and 1 part Balsamic until creamy.
For sauces, place about a cup of balsamic in a saucepan, bring it to a boil, then let it simmer for 10 minutes. It will continue to thicken after being removed from the heat. If you need to salvage a hardened reduction, reheat it and add a bit of water.
