ZA'ATAR PAN PIZZA & AIOLI DIPPING SAUCE

The gorgeous spice of Za'atar makes for a whole new deep dish Middle Eastern style pizza experience. Once done, slice and enjoy a simple Za'atar inspired aioli dipping sauce that starts with simple store bought mayo.

INGREDIENTS:
Za'atar Pizza
450g pizza dough, usually half of store bought dough ball
1/2 cup fresh Extra Virgin olive oil + 3 tbsp to grease pan
2 tbsp Garlic olive oil
1 tbsp Burlap & Barrel Za'atar Spice
1/2 red onion, trimmed, sliced thinly, horizontally
5 sweet cocktail tomatoes, sliced horizontally (or 2 medium juicy hot house tomatoes)
1 fresh mozzarella ball torn in 2" pieces

DIRECTIONS:
Heat oven to 400 degrees. In a small bowl, whisk olive oils and Za'atar spice. Set aside. Form dough into a ball and let rise for 10 minutes. Roll or press out dough with palms until it's roughly the size of cast iron pan. Generously, grease the pan with olive oil to give the pizza a crispy crust. Place dough in pan and press out to edges as necessary. For ease, you can roll dough over a rolling pin before placing in pan. Pinch the edges to raise them just enough to keep olive oil sauce in place. Cover with plastic wrap and let rest for 30 minutes. Spread sauce evenly. Arrange toppings. Brush edge with olive oil. Place on bottom rack of oven. Bake pizza for 20 to 25 minutes until crust is golden brown. Remove from oven and let sit for 3 minutes. Before removing from pan, run a butter knife along the outside edges. Take 2 thin metal spatulas and lift out of pan, placing on wire rack to cool for 10 minutes.
