GARLICKY CARAMELIZED PORK CHOPS

Time to celebrate the classic pork chop. Without a stop at your nearby store, our recipe adorns them with a marinade made from infused EVOO's and balsamics: garlic, parsley, honey, and lemon. This marinade, when it sizzles on the grill (or stovetop) caramelizes, creating a luscious glaze that enhances the natural juiciness. The finished chops are a showcase of simple ingredients coming together in perfect harmony.

INGREDIENTS:
4 pork chops, thick, bone in
2 tbs Garlic EVOO 
1/2 cup Gremolata EVOO 
1/4 cup Sicilian Lemon white balsamic
2 tbsp honey (or 1 tbsp sugar)*
1/2 tsp Kosher salt
1/4 tsp freshly ground black pepper

* If you enjoy a whisper of ginger, substitute honey alone with Honey Ginger white balsamic

DIRECTIONS:

NOTE: This dish can be prepared in a cast iron pan on your stove top. See directions below. 

Preheat grill on medium-high. In a medium bowl, whisk all ingredients except pork until a creamy marinade is formed. Place the pork chops in a shallow dish or a resealable plastic bag. Pour the marinade over the pork chops, making sure they are evenly coated. Allow them to marinate for about 20-30 minutes to absorb the flavours. Brush the grill grates with olive oil to prevent sticking. Remove the pork chops from the marinade, shaking off any excess. Place directly on the grill grates. Cook 4-6 minutes per side, or until they reach an internal temperature of 135° for medium-rare or 145° for medium, using a meat thermometer to check doneness. Near the end of grilling on each side, before flipping, brush pork chops with remaining marinade to add extra flavour and moisture. Remove pork chops from grill and rest for a few minutes before serving. Serve with your favourite sides.

Stove Top Cooking:

Heat cast iron pan on medium high. Remove the pork chops from the marinade, shaking off any excess. Place in pan and cook 4 to 6 minutes per side until they reach an internal temperature of 135° for medium-rare or 145° for medium, using a meat thermometer to check doneness. Near the end of cooking on each side, and before flipping, brush pork chops with remaining marinade to add extra flavour and moisture. Remove pork chops and place on cutting board to rest for a few minutes before serving. Serve with your favourite sides.
