AUTHENTIC RAITA SAUCE

Raita is the cool, creamy contrast grilled chicken wants. If serving a classic warmly spiced Indian dish it softens it, adding a fresh cucumber crunch, and a tangy, lightly sweet brightness that keeps the whole dish lively. Spoon it onto your main or serve it alongside for dipping.

INGREDIENTS:

  • 1 medium length cucumber chopped in 1/4 inch pieces
  • 1-1/2 cups plain thick Greek yogurt or Dahi, a thinner salty yogurt
  • 1/3 cup finely chopped red onion
  • 1/2 tsp salt (if using Greek yogurt)
  • 1 tbsp Garlic olive oil
  • 1/4 cup fresh cilantro, chopped finely
  • 2 tbsp Honey Ginger white balsamic
  • 1 tsp Garam Masala (optional for garnish)

DIRECTIONS:

Combine all ingredients in a large bowl and stir well.
