CAPRESE SKEWERS
Caprese Skewers turn the classic summer salad into an easy, hand-held bite. Juicy cherry tomatoes, creamy bocconcini, and fresh basil are threaded together, then finished with rich, syrupy Denissimo balsamic for a platter that looks impressive and disappears fast.

INGREDIENTS:
  • 1 pint of cherry tomatoes
  • 1-200g tub of small bocconcini balls
  • 1 cup of fresh basil, leaves only
  • 10-20 skewers, depending on desired size
  • 2-3 tbsp Denissimo dark balsamic
  • 1/2 tsp salt

DIRECTIONS:

Cut cherry tomatoes in half or leave them whole. Place in a bowl with salt and mix well. Place into a fine mesh strainer and allow the salt to drain some of the liquid from the tomatoes and season them. Strain the bocconcini cheese and set aside. Pull all the basil leave from the stems. Alternate tomato and bocconcini when placing on the skewers and put a basil leaf between each piece of tomato and cheese. Place all the skewers on a platter and drizzle with the balsamic to serve!
