ANYTIME MEATBALLS

Here's one of our easiest, most basic meatball recipes. And one that was tested for the perfect meat to bread crumb to egg ratio, by our favourite Melissa Clark.

INGREDIENTS:

  • 450g ground meat (pork, beef, veal, chicken, turkey or a combination)
  • 1/2 cup panko bread crumbs
  • 1 egg
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  •  Optional: 1/2 tsp ground cumin, curry powder, chile flakes or garam masala
  • 2 garlic cloves, minced or 2 tbsp onion, finely minced
  • Chopped parsley, basil or cilantro
  • Olive oil, for frying (optional)

DIRECTIONS:

In a large bowl gently combine all ingredients. Roll into 1-1/2 inch balls. Transfer to a baking sheet, placing at least 4" below the broiler. Broil until golden and firm 7-10 minutes. Or fry in oil until deeply browned.
