One-Minute Fresh Olive Oil and Balsamic Salad Dressing
2 parts extra virgin olive oil (eg. 2/3 cup)
1 part dark or white balsamic (eg. 1/3 cup)
Kosher salt and fresh ground pepper to taste
Optional: 1/2 - 1 tsp Dijon mustard
Place balsamic and salt (plus mustard, if using) in small bowl. Slowly add olive oil, whisking constantly until creamy. You can also use a food processor or blender. It's important that the oil and balsamic emulsify (blend evenly). Alternatively, you can add balsamic directly to salad greens and veggies. Salt to taste. Then add olive oil. (Always add oil after balsamic - or any vinegar - since adding oil first won't allow the balsamic to touch all surfaces, evenly.) Then toss gently. Add fresh ground pepper to taste before serving. Have extra oil and balsamic on hand for extra drizzle.
