Why are "fused" extra virgin olive oils so special? The pressing process, sometimes called "argumato", is complicated, costly and therefore rare. Fresh, ripe locally sourced produce is brought to the mill at precisely the same time as newly harvested olives and crushed simultaneously. Be on the lookout for producers who simply add flavour while maintaining their products are fused. The flavour of an authentic fusion is deep, complex and filled with the aromas of the original produce. Each one of ours is special in its own right following decades of experimentation from our producers. To them it's a labour of love.
