SWEET & SPICY SHRIMP WITH GRILLED FRUIT

 QUEEN OF THE GRILL: SWEET, CITRUSY PASSION FRUIT

WHAT WOULD IT BE LIKE TO HAVE THE TASTE OF LEMON, LIME, ORANGE & GRAPEFRUIT IN A SINGLE FRUIT?

This citrus bounty is found in Passion Fruit. We infuse this hard-to-find tropical fruit in our aged white balsamic. There's no need to fuss with seeds or pulp or the long wait for the fruit to ripen before you can use it. And there's nothing better than marinating with Passion Fruit. We've created two recipes that celebrate it. One that adds a bit of chipotle spice and another that uses grilled fruit. 


CHIPOTLE GRILLED SHRIMP WITH PASSION FRUIT

Shrimp prepped in our Passion Fruit marinade, then drizzled with our Chipotle olive oil, makes a perfect summer appetizer or main meal. A careful grill setting will give a good-looking sear without overcooking.

SERVES: 4

INGREDIENTS:

48-50 raw shrimp, deveined, shells off
12 skewers (soaked in water) 
1/2 cup Passion Fruit white balsamic
1 cup Ogliarola (Italy) olive oil 
1 tbsp Chipotle olive oil for generous post grill drizzle
Salt and pepper to taste  

DIRECTIONS:

Preheat grill to medium. Slide about 5-6 shrimp onto each skewer. In a small bowl mix remaining ingredients. Place skewered shrimp in shallow baking dish. Pour mixture over shrimp and leave for one hour. Brush off extra mixture before placing on grill. Leave on grill for 2 minutes per side or until opaque. Remove from grill and place on platter then generously drizzle Chipotle olive oil to taste. Serve immediately.

GRILLED FRUIT WITH PASSION

Firm fruits like apples, strawberries, and pineapples as well as thick-skinned fruits like watermelon are the easiest to grill since they hold their shape and texture while cooking. A rule of thumb is to select fruits that are almost ripe, barely ready to eat.

INGREDIENTS:


1/4 cup Passion Fruit white balsamic
1/2 cup fresh Ogliarola olive oil 
Variety of fruit cut into 2" - 3" pieces (or less if skewered)
Optional: Skewers soaked in water

DIRECTIONS:

Preheat grill to medium. Make sure the grates are completely clean. Soak fruit in large bowl of cold water for 20 minutes which helps to make them juicy while on the grill. Add a splash of Passion Fruit balsamic to bowl to preserve colour and flavour. While soaking the fruit place balsamic and oil in a small bowl. Whisk until completely mixed. Before placing fruit on grill pat dry and then brush the fruit with the balsamic/oil mixture.
