Shrimp prepped in our Passion Fruit marinade, then drizzled with our Chipotle olive oil, makes a perfect summer appetizer or main meal. A careful grill setting will give a good-looking sear without overcooking.
48-50 raw shrimp, deveined, shells off
12 skewers (soaked in water)
1/2 cup Passion Fruit white balsamic
1 cup Ogliarola (Italy) olive oil
1 tbsp Chipotle olive oil for generous post grill drizzle
Salt and pepper to taste
Preheat grill to medium. Slide about 5-6 shrimp onto each skewer. In a small bowl mix remaining ingredients. Place skewered shrimp in shallow baking dish. Pour mixture over shrimp and leave for one hour. Brush off extra mixture before placing on grill. Leave on grill for 2 minutes per side or until opaque. Remove from grill and place on platter then generously drizzle Chipotle olive oil to taste. Serve immediately.
