SERVES: 4 to 6
3 pounds of chicken wings, tips removed and broken in half
1-1/2 tbsp baking powder
2 tsp salt
1/2 cup Serrano Honey vinegar
1/4 cup Toasted Sesame oil
1/4 cup fresh extra virgin olive oil
Preheat oven to 400 degrees. After removing tips, break wings in half at joint. Pat them dry. Add baking powder and salt to a large mixing bowl. Then add wings and toss by hand until evenly coated. Place the chicken wings thicker skin-side down on a foil lined baking sheet. Cook for 45 to 50 minutes, checking every 15 minutes, until golden and crispy. Do not over cook. While chicken is baking place Serrano Honey vinegar, Sesame oil and extra virgin olive oil in a large bowl. Whisk until completely blended. You can use a blender if you wish. Place 1/2 cup aside for dipping sauce. When wings are done place in bowl and gently toss until all wings are covered with sauce. Place on serving platter and enjoy!
