6 to 8 sweet Italian sausages
1 large onion, peeled and cut in thick slices
Fill large pot with cold water. Bring to a boil. Then reduce heat to simmer. Add onions and sausages. Poach for 5 to 10 minutes with an inside temperature of 150 degrees. Remove sausages, drain, then transfer to hot grill on direct heat for a few minutes until they are lightly charred on all sides.
