Blueberry Salad

Ingredients:

Salad:
fresh spinach
blueberries
crumbled bleu cheese or gorgonzola
Sliced red onions

Vinaigrette:
½ c Kingston Blueberry Balsamic Vinegar
2-3 Tbsp Kingston medium Extra Virgin Olive Oil
1 clove garlic, finely chopped
1 Tbsp Dijon mustard
3 Tbsp honey
salt and pepper to taste

Products needed:
Blueberry Dark Balsamic Vinegar
Use one of the following:
Picual Reserve EVOO 2015 Chile
Coratina EVOO 2015 - Australia
Favolosa 2015 (Italy)

Directions

Blend all the vinaigrette ingredients except for olive oil until the dressing thickens just a bit.

Toss with the rest of the salad ingredients.
